Creamy Coleslaw
Ingredients – Chicken Schnitzel
- ½ cup plain flour
- 1 egg
- 2 tablespoons milk
- ½ cup breadcrumbs (panko or fresh)
- Salt and pepper
- 4 chicken breast fillets
- Sunflower or vegetable oil (for shallow frying)

with real homemade mayonnaise
Homemade Mayonnaise (makes ~1 cup)
- 1 large egg yolk (room temperature)
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice or white wine vinegar
- ¾ cup (180 ml) neutral oil (sunflower, grapeseed or light olive)
- Salt and white pepper
Method: Whisk yolk, mustard, lemon juice and pinch salt. Add oil drop by drop at first while whisking constantly, then in a thin stream. Keep whisking until thick and glossy. Season. (Stick blender works brilliantly!)
Creamy Coleslaw
- ½ small head white cabbage, very finely shredded
- 2 medium carrots, peeled and grated
- 3 spring onions, finely sliced (or ½ red onion)
- ½–¾ cup homemade mayonnaise
- 1–2 tablespoons lemon juice or white wine vinegar
- Salt and plenty of black pepper
Method: Toss vegetables in a big bowl. Add mayo and lemon/vinegar. Mix well. Taste — it should be creamy and tangy. Let sit 20–30 min before serving for best flavour.
