Sausages with Broccoli, Chilli & Lemon

Juicy pork & fennel sausages with tender-crisp broccoli in a quick, fiery pan sauce

A brilliant 20-minute one-pan dinner. The sausages release all their gorgeous fat and flavour while the broccoli stays bright and perfect. Weeknight winner that tastes like restaurant food.

Ingredients

  • 6 fat pork & fennel sausages (or any thick, good-quality sausages you love)
  • 1 large head broccoli, cut into florets
  • Olive oil
  • 1 large onion, sliced
  • 3 garlic cloves, finely minced
  • ½ teaspoon dried chilli flakes OR ½ fresh red chilli, finely diced
  • A good glug of white wine (about 100 ml)
  • 150 ml chicken stock
  • Handful of pitted black olives (optional)
  • Squeeze of lemon juice (about 1 tablespoon)
  • Salt & freshly ground black pepper

Method

1. Add a good glug of olive oil to a large heavy-based frying pan and heat over medium-high.
2. Add the sausages and cook, turning from time to time as needed, until golden and nearly cooked through.
3. While the sausages are cooking, steam the broccoli until just tender — be careful not to overcook it (still bright green and with bite).
4. When sausages are cooked, remove from the pan.
5. Add the sliced onion to the pan (add a little more oil if needed) and sauté until translucent and softened.
6. Add the garlic and chilli flakes (or fresh chilli) and cook, stirring, for 1 minute.
7. Add a good glug of white wine and stir, scraping up all the lovely bits from the bottom of the pan. Cook until the wine has almost fully evaporated.
8. Add the chicken stock and a good squeeze of lemon juice. Simmer for 1 minute.
9. Return the sausages to the pan, add the steamed broccoli (and olives if using), and give everything a good stir to coat in the sauce. Heat through for 2–3 minutes.
10. Taste and adjust seasoning. Serve immediately with crusty bread or mashed potatoes.

Pro tips:
• Pork & fennel sausages are perfection here, but any thick sausage works
• The lemon at the end lifts everything — don’t skip it
• Ready in under 25 minutes — proper fast food
